There are a few factors that impact your levies in Crusader Kings 3. You’ll have to be more organised than that.

There isn’t just a button that says ‘recruit peasants and give them pitchforks’. It’s a bit of a pain to get your levies increased in Crusader Kings 3. i find that having 30k infantry of any type gets destroyed and ripped to shred pretty fast by the 100k stack of doom long before the rest of your backup force arrives. How to increase your levies in Crusader Kings 3 I go cavalry since the way to beat mongols aside from amphibous landings when your in the middle of land is to have a baiting force usually i put 20-30k of cavalry to survive the hail of archer fire that comes from his horse archers, long enough for the rest of my army - retinues/mercs/levies in behind and surrounding the bait county to come into the county before the bait force is wiped out. and from duke to becoming king is pretty easy (except for 1060 start france) that if u plan on taking the kingdom its usually by means of assasinations, alliances, and marriages and if you must declare to become king u usually have to have alliances, cash, and ur levies and mercs rdy plenty to overcome his forces. When i play as a count going to duke u barely have enough land to increase retinue cap to even field one. nothing a few levies or mercs to overcome. Its more of theres no one really to be afraid of in the game since the position of having to have the best type of retinue for things against not a doomstack is pretty rare. Whenver i start a new game in my brain its always in the back of my head to have cavalry to counter their units :P

Sry i think my view is biased towards cavalry because of the mongols and aztecs.
